VEGETABLES
1/2 each of red, yellow and green peppers
1/2 onion
1/2 or 1small courgette
tomatoes
1 teaspoon Thai Green Curry paste
1 tablespoon olive oil
leaf of Vietnamese Coriander, chopped
Slice peppers, onion, courgette, and tomatoes if necessary (I used up
the titchy cherry ones from the garden and chopped them in half).
Chop up the coriander leaf small.
Put the oil in a wok or frying pan, heat up and add the curry
paste. Fry for 30 seconds.
Mix veg up with the coriander, add to the wok and stiry-fry for 10-15
minutes.
Add soy sauce if wished.
You can throw anything you want into this mixture and increase the
quantities and it should still work!
